内容記述 | In most organs of higher plants (i.e. leaves, flowers, roots), L-ascorbic acid is ubiquitous and accumulated to millimolar concentrations. The physiological function of L-ascorbic acid in higher plants is mainly the scavenging of active oxygen species(O2-, H2O2,・OH, 1O2) which result in oxidative damage at the cellular level. The generation of active oxygen species is inevitable in all plant cells, not only under normal conditions but also under various environmental stresses (i.e. intense light, drought, ultraviolet rays, low/ high temperature and air pollution). To protect the living body against damage caused by active oxygen species, organisms including higher plants generally evolve a detoxification system, composed of antioxidants and antioxidative enzymes. L-ascorbic acid, as an antioxidant directly reacts with H2O2, catalyzing by ascorbate peroxidase which is specific to ascorbate, as a major antioxidative enzyme in higher plants. There was a greater concentration of ascorbic acid in mature leaves of parsley (Petroselinum crispum) than in those of other general kinds of edible herbaceous plants. The activity of ascorbate peroxidase in mature leaves of higher plants is usually lower than the activity in young leaves, while the activities of catalase and peroxidase (nonspecific-peroxidase) increase in mature leaves. However, in mature leaves of parsley, the activity of ascorbate peroxidase was obviously high in comparison with the activities in mature leaves of Japanese radish (Raphanus sativus) and Brassica campestris. From these results, it was suggested that ascorbate peroxidase may play an important role in detoxification of H2O2 in mature leaves of parsley. | |||||
